KATHY’S RELISH “No Onions”

 2.50 kg ripe tomatoes, peeled and roughly chopped ## Also see the Alternative combination
 3 cloves garlic, finely chopped
 2 tsp ground ginger
 ¼ tsp cayenne
 3 tsp Salt
 300 g white wine vinegar
In a Muslin Bag
 2 tsp whole cloves
 1 tbsp whole allspice
 2 tsp peppercorns
and
 500 g Sugar
An Alternate Combination

Can also be made using 2kg. Tomatoes and 500g red capsicums

Method

Combine all except sugar and boil together for 45 minutes, stirring occasionally.

Now Add sugar and stir until dissolved.

Boil a further 1 hour 15 minutes, or until desired consistency is reached, stirring occasionally.

Remove muslin bag and press hard over pot to remove any liquid. Discard.

Bottle and seal while hot.
